The Controlled Atmosphere does not dehydrate the fruit

There are marked differences regarding the maintenance of relative humidity between the different technologies present in the industry (Table 1), with Regular Air being the one with the lowest percentage, since it goes with the container’s ventilation open during the maritime transit, losing a large amount of relative humidity inside the container, and as a consequence, around the fruit.

 

The MAP Bag is characterized by having good relative humidity maintenance, which translates into firm fruit with less weight loss. The problem is that with a relative humidity >95%, the conditions are met for the proliferation of fungi to accelerate, added to condensation and free water very close to the fruit.
